What truly sets this blanco tequila apart from rival brands is its smoothness. Despite not being aged, El Jimador Blanco is as smooth and easy to drink as another distiller’s reposado variant and mixes well. On The Nose El Jimador Añejo spends an entire year ageing in American oak barrels, lending it an unrivalled soft and sweet taste, plus a rich dark amber colour. This tequila is rich, full-bodied, and can make any occasion special. On The Nose It has an appealing aroma, and it starts with roasted agave scents on the nose, followed by vanilla, oak wood, and pepper spice with a hint of alcohol. The Añejo is undisputedly a paragon of sipping tequilas, while the Blanco is a great shooter and mixer. Lastly, the Reposado represents an intelligent compromise between the two. Given the poor showing with the ice, I thought for sure that there would be nothing redeeming in the margarita. But I was wrong, there actually is something interesting here.

El Jimador tequila has some medicinal and alcoholic hints upfront but is mellowed by sweet vanilla. Adding ice might help smoothen a few rough notes for our second drink. Second Chance The liquid is nice and crystal clear, like the water from a fresh mountain spring. As for the aroma coming off the glass, it’s spot on for a typical tequila — herbal notes close to fresh cut grass with a bit of lemon citrus to brighten the whole thing up. An earthy flavour characterised by oak-aged agave, cinnamon, and butterscotch. Delicious sweetness lingers throughout, and the caramel notes are an undisputed highlight. Like other El Jimador tequilas, Blanco uses only pure Weber blue agave. These notes are present throughout the spirit and are joined on the nose with fresh citrus, vegetal, and light wood aromas. On The Palate This citrussy clearness continues on the palette, where this silver tequila is sweet and pine fresh with a peppery aftertaste with hints of grilled vegetal and intense blue agave notes.A very slight - but not unpleasant - bitterness/sourness comes through, less so when warmed up somewhat; this is coupled with a slightly diminished continuation of the initial taste, albeit without the fruit. There is a hint of wood in there, with some obvious cooked agave - you can taste the 'cookedness' (struggling to put this into words) of it. There's some mild spice in there too, although I don't find the cinnamon that others have. I do get the butterscotchiness though; it's a very smooth feel. I've no idea how this compares to the mixto version (which I have no desire to try unless by some miracle it is actually better than this), but I can say that it walks all over the other mixtos I've tried. Tequila production on what would become the Herradura distillery started in the early 19th century, started by a man named Feliciano Romo. In 1870, Félix López took over the property and registered it as a legal distillery named Hacienda San José del Refugio. The distillery remained in the family even after Félix’s death in 1878, operated first by his wife and later by her brother, Aurelio López. Fresh agave and citrus upfront that is soon warmed by spices and sweet vanilla and cinnamon mid-palate. A hint of hazelnuts follows while the vegetal note is well-balanced and earthy with a moreish heated finish of agave, oak and spice. Best Served
