Microplane Elite Series Grater: Like the other Microplane graters, this rasp-style grater performed fine, but the plastic frame that the blade was set in felt clunky and took up more space in the cabinet. Zyliss SmoothGlide Rasp Grater: This grater didn’t have enough teeth and the bend in the handle made grating lemons awkward and uncomfortable when held upside down. I’ve been using a Microplane rasp-style grater for zesting lemons and grating nutmeg for years, so it didn’t surprise me when the Microplane 4-Sided Stainless Steel Multi-Purpose Box Grater performed like a champ. Unlike traditional stamped-style models, the blades for this grater are etched into the metal using a chemical process that creates super-sharp edges. That allowed this grater to perform above-average on all four sides. The fine holes resulted in beautifully zested lemons and a pile of airy, fluffy Parmesan, whereas the coarse holes gave us long strands of mozzarella and potato shreds that made the best latkes in the group.

Sturdy: A good grater should sit firmly on a counter, cutting board, or plate to ensure safe grating. A stable base on box graters or a non-slip edge for paddle and flat graters makes that easier. Graters should also be solidly built, with metal sides that don’t bend under pressure from hard vegetables. Potatoes: We sliced half a potato on each box grater with a wide blade to see how consistent the pieces were. In testing, this managed to grate parmesan, but it wasn’t as easy as some others. However, it did a fine job with our softer Colby cheese. Slicing carrots wasn’t particularly effective, but it did a fine job slicing zucchini. We wouldn’t use this for zesting citrus unless we had no other options. When testing Parmesan cheese, we found the graters had four types of fine shredding: individual strands, wide chunks, fluffy and soft, and super annoying to remove from the grater! Nutmeg: We grated one nutmeg berry on the fine holes of each box grater and each rasp or zester to see how easily teeth cut through the hard flesh of the berry. It would be fine for occasional use, but a dedicated zester might be preferred if a lot of zesting is on the menu. The grater also has a rounded, slightly padded handle, so it was comfortable to hold onto during our tests.
